Turtle Pecan Cookies

 

Who doesn’t love a good cookie? I know I can’t pass one up! This Turtle Pecan Cookie recipe is one to add to your standard cookie rotation. Offering the perfect combination of unique and classic, old and young alike are sure to sneak an extra one out of the cookie jar.

Recipe:
1 ¼ cups all purpose flour
¼ cup cocoa powder
½ tsp salt
½ tsp baking soda
1 stick butter, softened
½ cup brown sugar
½ cup granulated sugar
1 large egg
1 tsp vanilla
½ cup semi-sweet chocolate chips
½ cup chopped caramel squares
½ cup farm fresh pecan pieces (I use large pieces, but find a size that suits your fancy)

Directions:
1. Chop the caramel squares into small pieces with a sharp knife. Combine the chocolate chips, farm fresh pecan pieces and caramel pieces in a bowl. Reserve 1/2 cup for the outside of the cookie dough balls.
2. Preheat the oven to 350º F.
3. In a small bowl, mix together flour, cocoa powder, salt, and baking soda.
4. In a medium mixing bowl, cream together butter, brown sugar. Mix in the egg and vanilla. Add the flour mixture and the toppings (all but the 1/2 cup you’re reserving) to the wet mixture and mix until everything is combined.
5. Scoop the dough in balls and top each with the pecan-chocolate chip-caramel mixture.
6. Place the cookies 3 inches apart on a baking sheet and bake for 12 minutes. Before removing the cookies from the sheet, allow to cool for 5-10 minutes.
