Mini Fruit Pizzas

 

Nothing tastes better in the heat of summer than a light, sweet, fruity treat. These mini fruit pizzas are just that, and so, so refreshing to enjoy and share with others. This is the kind of treat that completes the best of summertime memories. So line up your favorite toppings and get to creating your one-of-a-kind mini sweet pizzas!

1. These mini fruit pizzas are so customizable. Mix and match toppings as you like. Add your favorite fruit, candy or nut (which is obviously pecans, right? ;)) and enjoy.
2. Mini fruit pizzas are very fun and easy to create. Build with the kiddos and grandkiddos and taste the fruit (and nuts) of your labor. Don’t forget to snap a picture of the making so you can treasure the memory any time.
3. These mini fruit pizzas freeze well. The key is to form the dough into balls. Freeze for 30 minutes. Then toss the frozen dough balls in a plastic container. Once ready to prepare, pull out of the freezer. Arrange on a cookie sheet. Allow dough balls to thaw. Bake according to original instructions.

Recipe:

  • Cookie Base:

    • 3 Cups Flour

    • 1 1/2 Teaspoons Baking Powder

    • 1 Teaspoon Salt

    • 3 Sticks of Butter or Margarine

    • 1 1/2 Cups Sugar

    • 2 Eggs

    • 1 Tablespoon Vanilla

  • Icing:

    • 2 Cups Powdered Sugar

    • 1 8 Ounce Package Cream Cheese

    • 1/2 Teaspoon Vanilla

    • 1 Tablespoon Milk

  • Toppings:

    • Farm Fresh Pecan Pieces (I used Large Pecan Pieces)

    • Favorite Fruit (I used strawberries and blueberries)

    • Favorite Candy Pieces

Directions:

  1. Preheat oven to 375*F.

  2. Combine the dry ingredients (flour, baking powder, salt) in a medium mixing bowl.

  3. Cream together butter and sugar for about 4 minutes. Add in eggs one at a time until mixed. Whip in vanilla.

  4. Combine the wet and dry ingredients in a large mixing bowl.

  5. Scoop dough mixture into balls. Place on a greased cookie sheet. Pat flat until 1/3 inch thick..

  6. Bake for 10 minutes, or until golden brown on the edges. Remove from the oven and cool completely.

  7. Prepare the icing: mix together the cream cheese, powdered sugar, vanilla and milk until smooth.

  8. Apply a liberal amount of icing to each cooled cookie. Top with your farm fresh pecan pieces and all your other favorite toppings.

  9. Enjoy!
