Spicy Cinnamon Roasted Pecans

Good, healthy snacks can sometimes be hard to come by. Taking a few minutes to stock your desk, purse, car and other high-traffic areas can mean the difference between productivity and a quick bout of hanger (hunger + anger). Today, I’m sharing one of my favorite easy, homemade snack recipes. If you can’t have some of our hand-roasted pecans sold in our online shop, these pecans will do the trick.

Recipe:
3 Cups Farm Fresh Pecan Halves (I used our Pawnee halves)
1 Teaspoon Cinnamon
1/2 Teaspoon Cayenne Pepper
1/2 Teaspoon Salt
1 Egg White
2 Teaspoons Water
1/4 Teaspoon Vanilla

Directions:
1. Preheat oven to 225*F.
2. Combine dry spices in a bowl.
3. Whisk together the egg white and water in a large bowl. Whisk until bubbly.
4. To the egg mixture, add the pecans. Stir until the pecans are evenly coated.
5. Sprinkle the spices on the pecans. Coat the pecans liberally.
6. Arrange in a single layer on a cookie sheet. Bake for 1 hour, stirring every 15 minutes.
7. Enjoy right away or freeze for later.
