There’s nothing easier than this recipe when it comes to adding a yummy treat to the summer weeknight menu. Simple pantry staples + fresh summery flavor = an unbelievably easy treat.

Recipe: 

4 Cups Blueberries (I used frozen, but can use either fresh or frozen)
2 Tablespoons Sugar
2 Tablespoons Cornstarch

3 Tablespoons Brown Sugar
2 Tablespoons Butter
½ Cup Old Fashioned Oatmeal 
¼ Cup Farm Fresh Pecan Meal
2 Tablespoons Flour

Directions: 

  1. Preheat oven to 350*F.

  2. Combine the berries, sugar and cornstarch until berries are fully coated. Place in a shallow 10-inch pie dish.

  3. In a separate bowl, mix together the farm fresh pecan meal, flour, brown sugar and cold butter. The mixture should be crumbly. 

  4. Layer the oatmeal mixture on top of the berries.

  5. Bake for 20 minutes. Serve warm with ice cream, cold with whipped cream or enjoy plain.
