Recipe:

  • 1 Stick Butter

  • 1 Cup Sugar

  • 2 Eggs, room temperature

  • 2 Tablespoons Lemon Juice

  • 1 Teaspoon Vanilla

  • 1 5.3oz Container of Greek Yogurt (I used Blueberry, but feel free to use Lemon, Vanilla or Plain)

  • 1 ⅓ Cup Flour

  • ⅓ Cup Farm Fresh Pecan Meal

  • ½ Teaspoon Salt

  • ¼ Teaspoon Baking Soda

  • ⅓ Cup Farm Fresh Pecan Pieces (I used Large Pieces)

  • ½ Cup Blueberries (I used frozen, but you can use fresh)

  • For Icing:

    • ½ Cup Powdered Sugar

    • 2 Tablespoons Lemon Juice

Directions:

  1. Preheat oven to 350℉.

  2. In a mixing bowl, cream together butter and sugar. Mix in the eggs one at a time. Add the vanilla, lemon juice and yogurt. Cream together only until combined.

  3. In another bowl, combine the flour, baking soda, salt and pecan meal.

  4. Gently add the dry ingredients to the wet mixture, being careful not to overmix (some clumps are okay :) ).

  5. Finally, fold in blueberries and farm fresh pecan pieces

  6. Pour batter into a buttered 9” x 5” loaf pan. Check doneness after 55 minutes. The loaf is done when a toothpick comes out clean after inserted into the middle of the loaf.

  7. If you’d like, mix up the icing, remove bread from loaf pan once cool and pour icing over loaf.

  8. Share with friends and neighbors or save for yourself to enjoy!
