Multigrain Bread with Pecan Meal

Recipe
1 cup warm milk
3/4 cup warm water
2 tablespoons honey
1 tablespoon salt
1/4 cup flax seed
1/2 cup farm fresh pecan meal
1 cup old fashioned oats
1 package active dry yeast
1/2 cup (1 stick) butter, melted
3 cups unbleached flour

Directions:

1. In a small bowl, combine yeast, water, milk, butter and honey and set aside for 10 minutes (the mixture should be foamy with bubbles).

2. In a separate mixing bowl, combine all remaining dry ingredients (flour, flax seed, salt, pecan meal and oats).

3. To the liquid mixture, gradually add the dry ingredients. Mix until fully combined (but don’t over mix).

4. In an oiled mixing bowl, place the dough in a warm place to allow to rise until doubled, about 1 hour.

5. After having risen the first time, turn the dough onto a floured surface and punch down. Split the dough into two even balls and shape each into a loaf.

6. Place each piece of dough in an oiled loaf pan and allow to rise one last time until doubled, about 1 more hour.

7. After having risen a second time, place the loaves into a 350* preheated oven for 35-40 minutes, or until evenly browned.
