Recipe:

2 Small Zucchini (or 1 large)
1 Cup Farm Fresh Pecan Meal
1 Egg
1/4 Cup Grated Parmesan Cheese
1 Teaspoon Everything Bagel Seasoning
1/2 Teaspoon Pepper
Salt
Cooking Spray

Directions:

1. Slice zucchini in consistent sizes. Place slices by single layer on a baking sheet. Sprinkle liberally with salt. Place additional paper towels over the slices. Let set for 15 minutes. (Removing as much moisture as possible from the zucchini will ensure crispier chips.)

2. In a bowl, combine the farm fresh pecan meal, seasoning, pepper and cheese. In a separate bowl, whisk the egg.

3. Once allowed to dry, place each zucchini slice in the egg mixture, then move to the dry mixture. Make sure each slice is liberally coated with ‘“breading”.

4. Spray “breaded” slices with cooking spray, then cook in a single layer in the air fryer at 350*F for 6 minutes. Serve warm with your favorite dipping sauce.
